Cusine and Culture-CHEF 1200 Overview

In Cuisine and Culture, you may be asked to address any of the following course learning outcomes that require the use of your information literacy skills.

  • Describe the significance of food availability and how it impacts culture and shapes a society.
  • Assess the ecological impacts of different food production systems at various points in history.
  • Describe a variety of food customs specific to certain cultures in time.
  • Discuss the importance of specific foods for a variety of religious traditions and societal celebrations.
  • Discuss how food traditions are passed on to other cultures or through time.
  • Describe the impact that different cuisines/diets have had on human well-being from both economic and health status perspectives.
  • Organize and present ideas and information visually, orally and in writing according to standard usage.
  • Understand the relationship between history, culture, religion and cuisine.

Try some food research

In order to experiment with research in different eras and regions of the world, try the following activity. It has been designed (with some adaptations) to work with the textbook Cuisine and Culture: A History of Food and People (3rd edition) by Linda Civitello.
